A hearty, filling, and flavorsome soup that’s full of vitamins. The potatoes add thickness to this rich and creamy soup.
Serves: 4-5 people
Preparation Time: 10 minutes
Cook Time: Approximately 20 minutes
o 3 large heads of broccoli
o 2 large potatoes, peeled and cubed
o 1½ cups/8oz/225g of crumbled blue Stilton cheese
o 1 white onion, chopped
o 1½pints/850ml vegetable stock
Pour stock into a large pan and bring to boil. Chop broccoli and add to the pan, along with the potatoes and onion.
Return to the boil and cook for 20 minutes, until tender. Add crumbled cheese, retaining a small amount for serving.
Pour into blender jug and blend until smooth. Season to taste.
Serve with a small amount of retained cheese on top. A nice crispy grilled piece of pancetta to the side is also a great addition!
