Citrus Banana Cheesecake

This is a very ‘soft’ cheesecake, extremely creamy in texture. We use bananas with a hint of citrus, but you can use any soft fruit that you enjoy. You will also need a 20cm/8 inch springform tin to set the cheesecake. Decorate with extra banana slices, caramel or toffee sauce, and a sprinkle of pistachios!

Preparation Time:           15 minutes

Chilling Time:                  3-4 hours


For the base:

o   340g/12oz plain biscuits (we use digestive biscuits)

o   Large pinch cardamom

o   3 tbsp unsalted butter

For the Filling:

o   450g/1lb cream cheese

o   1 large banana

o   3 heaped tbsp icing sugar

o   1 tsp vanilla essence

o   2tsp freshly squeezed lemon juice


o   Caramel or toffee sauce

o   Chopped pistachios


For the base:

Gently melt the butter over a low heat.

Break up the biscuits and place in your blender. Add the melted butter and ground cardamom, blitz until smooth. If the mixture is too ‘biscuity’, add a little more butter to bind. Spread into the base of your tin, pack down and smooth over. Place in the fridge until completely cool. Clean out your blender, as you will need it again.

For the Filling:

In your blender, combine cream cheese, banana, vanilla essence, icing sugar and lemon juice. Blend until smooth.

Tip out over the cooled base, smooth over, cover and place in the fridge.

Chill for 3 – 4 hours to set.

Click open the hinge, and gently remove the sides from the outside of the cheesecake. If you can, slide the cheesecake onto a pretty plate, otherwise, leave on the metal base.

Decorate with extra banana slices and chopped pistachios if required, but do squeeze some lemon juice over the top to prevent browning. Serve with caramel or toffee sauce for extra deliciousness!
