Quick and easy party style snack, you can put it together in minutes using your blender. We have used dried apricots, but you can use dried cherries or cranberries if you prefer the taste. Be creative!
Serves: 4 – 5 with crackers
Preparation Time: 15 minutes
Cook Time: No cook, but 2 hours for chilling
o 225g/8oz cream cheese
o 225g/8oz feta cheese (you could also use mature Cheddar cheese or even blue cheese)
o 85g/3oz dried apricots, chopped
o ½tsp nutmeg
o ½tsp ground black pepper
o 85g/3oz mixed nuts (or sesame seeds), toasted
o Small crackers (5 or 6 per person)
Mix cream cheese and feta in your blender, until creamy. Stir in the apricots, ground black pepper and nutmeg, gently blend again.
Shape into a ball and wrap in plastic wrap. Refrigerate at least 2 hours.
Roll in nuts or sprinkle over sesame seeds before serving. You could also simply grind some more black pepper over the ball.
Place on a large plate with the crackers as an accompaniment.
