Making your own nut butters is incredibly easy. Most nuts can be used for butters, and using roasted nuts, or roasting your own, really brings out the flavors. Spread on celery sticks, or just simply on delicious wholemeal or granary crusty bread.
Makes: About ½lb/225g
Preparation Time: Approximately 20 minutes

o 7oz/200g/2 cups roasted almonds
o 3½oz/100g/1 cup honey roasted almonds
o 2tsp almond oil or olive oil
o Pinch of sea salt
Add all the nuts to the bowl of your blender. Blend for several minutes (it will be very noisy!) then scrape down the bowl and carry on blending until your mix reaches the desired consistency.
It will start out grainy, but gradually become a paste after about 15-20 minutes of blending, as the oil is released from the nuts. Once you like the look of the consistency, add the salt and blend until it is mixed through.
Note: when blending for a long time like this, it’s important to turn off the blender every couple of minutes to allow it to cool down and to prevent the motor from overheating.
