A light fresh soup – or try serving it as ‘shots’ in small glasses as a canapé or a pre-dinner ‘amuse bouche’. Whichever way, it is really tasty!

Serves:                            4

Preparation Time:            5 minutes

Cook Time:                      10 minutes

Ingredients

o   1oz/30g butter (to fry)

o   1lb/450g fresh or frozen peas

o   4 rashers smoked streaky bacon, chopped

o   1 medium white onion, chopped

o   1tbsp chopped fresh mint

o   1½pints/850ml water

o   Salt and pepper to season

Method

Heat butter in a large pan.

Add onions and half the bacon, and fry until onions are soft.

Add peas and mint, pour water over and cover with a lid.

Simmer for 10 minutes, until peas are soft.

Meanwhile, fry the rest of the bacon until crisp (pour any fat that comes out into the pea pan). Retain for garnish.

Pour the soup into the blender jug and blend until smooth.

Season and sprinkle with crispy bacon pieces before serving.
