Applesauce is a perfect accompaniment for roast meats such as pork, or for goose or duck. You can also use this in pies and puddings, or as baby food!

Ingredients
o 425g/1lb fresh apples, peeled and sliced
o 2tsp fresh lemon juice
o 80g/3oz sugar (brown or white, whatever is your preference, but brown will discolour the sauce)
o 80ml/3fl.oz water
o Sprinkle of salt
o 1tsp cinnamon or all spice
Method
Cook apples with sugar and water for 5 minutes until lightly softened. If they begin to dry out, add a little more water. When cooked, drain over a bowl and reserve the liquid.
Place ¾ of the apples into your blender with the lemon juice, salt and cinnamon. Blend to a smooth sauce.
Add remaining apples and gradually add the juices from the pan, a little at a time to gain the consistency you require. Try to leave some of the apples a little chunky for extra texture by using the pulse button.
Serve with roast pork or chops as an ideal accompaniment.
